The cardoon is a striking, thistle-like perennial native to the Mediterranean, known for its silvery, deeply cut, spiny foliage and tall stalks topped with vivid purple, globe-shaped flowers. A close relative of the globe artichoke, it’s grown both for its architectural ornamental appeal and its edible leaf stalks. Cardoons can reach impressive sizes—often up to 5 feet tall and 6 feet wide—and thrive in sunny, open areas with well‑drained soil. Its flower blooms when dry are used as a rennet for making cheese vs other organs typically used from animal by products.
